Henry Dimbleby is co-founder of Leon, the award-winning fast food chain that serves healthy fast food. Together with John Vincent and Allegra McEvedy, he opened the first restaurant in London in July 2004, and six months after opening, Leon was named the Best New Restaurant in Great Britain at the Observer Food Monthly Awards (by a judging panel that included Rick Stein, Gordon Ramsay, Nigel Slater, Heston Blumenthal, Ruth Rogers and Jay Rayner). There are now more than 55 Leon restaurants (including branches in Washington DC, Amsterdam, Utrecht and Oslo).

Jane Baxter

Jane Baxter discovered a passion for cooking while at Leeds University and went on to work with Joyce Molyneux at The Carved Angel, who greatly influenced her culinary style, and at The River Cafe, which sparked her love for Italian cuisine.

She is the author of several award-winning cookbooks, including two Riverford Farm books, Leon Fast Vegetarian, Leon Happy Salads and Leon Fast & Free. In 2016, she founded Wild Artichokes in Kingsbridge, which features an Italian-inspired, vegetable-based, seasonal menu. She continues to cook and develop new dishes in and around South Devon and is involved with the Abergavenny Food Festival.
