"Pickles and Tarts" is a metaphor for men and women. "Tarts" are defined as "a dish baked in a pastry shell" (Merriam-Webster), but it can also be "a promiscuous woman: a woman who has many sexual partners, a prostitute," which is something the young woman, who picked an older man on a dating site, says in the story.
